Ayam Bakar Taliwang: 'Ini Baru Taliwang'

Ayam Bakar Taliwang or Taliwang grilled chicken is an indigenous food from Lombok Island, Indonesia. I had a chance to try this grilled chicken when I visited Mataram, Nusa Tenggara Barat for a business trip that I have. I tried Ayam Bakar Taliwang in a street-food vendor: Ini Baru Taliwang. This street-food vendor is located in front of Ratih Hotel, Mataram, Nusa Tenggara Barat.

Ayam Bakar Taliwang is a kind of main courses which commonly served in Lombok Island. It is prepared from 3 months old chicken which cut to two pieces. Some statements on the internet told me that the raw material for Ayam Bakar Taliwang should taste better if it comes from a free-range chicken. According to Wikipedia, the chicken was tenderized with a pestle before being grilled. In addition to the tenderization process, the chicken is dipped in cooking oil and spicy sauce which made with garlic, chili, salt, and shrimp sauce to get the tasteful flavor.

Ayam Bakar Taliwang is usually served with Plecing Kangkung which is another indigenous food from Lombok Island. It made from water spinach, peanut, and grated coconut which mixes with special spicy sauce.
